Koshka Cookies



I have spent a ton of time checking out cool small businesses on Etsy lately, and talking to the owners about what they do. One of my favorite new finds was Koshka Cookies! The shop is named after the owner's cat, which is an instant win with me, and includes some of the most chocolatey cookies ever! Jen, who whips up the homemade marshmallows and cookies herself, was awesome enough to tell me a little bit about what she does!


*Tell us a little about who you are and what you do.

I'm Jen Paley and I live in Boston, MA. I grew up just south of Boston in a very artistic and musical family. My Mom was always baking something, which is how I think I appreciate homemade baked goods so much. I always look forward to her breads and pies during the holidays. My grandmother on my Dad's side was always cooking and baking and loved to feed me and my brothers treats.

Growing up, I was always drawing and painting, and I followed in my Mom's footsteps to art school where I received a BFA in Illustration. My full time job is working in Book Publishing, and I love what I do. Now that I'm baking more often, I find that I have transferred my desire to draw and paint into creating delicious edible "works of art." I love that I can share my cookies and marshmallows with the awesome people on Etsy.


*How did you get started making marshmallows, and how are yours different than the ones you find in a store?

I think the same month I saw a program on TV about making marshmallows, I saw 'homemade' marshmallows for sale in a specialty store in Boston. I bought them right away to try them. Needless to say, I was not that impressed. The show I saw on making marshmallows didn't seem that difficult, so I decided to try it out myself. I brought the finished product to a
barbecue to test on my friends. Everyone loved them, so I knew they would be a hit. I am not really fan of the store brand marshmallows, but the ones I make (with pure vanilla extract) are so yummy and soft, you can't just eat one. I have become almost obsessed with different flavors of marshmallows and different ways of using the marshmallows, it's really exciting to try to
come up with something that I think people would really enjoy. One of my favorite things to make for parties are "Fluffer-nutter Moon Pies: two peanut butter cookies with marshmallows between them". I know the raspberry marshmallows dipped in chocolate are one of my co-worker's favorite treats.

*Are there any new flavors or products you're planning to add in the future?

I'm always trying to come up with something new, something that you wouldn't find in a store, or even in a bakery. I've been experimenting with Nutella cookies, and different flavors of marshmallows. I also love almond macaroons, and am trying to perfect a recipe of my own. I love feedback, so if anyone out there has suggestions of something they'd like to try, let me know!

*I noticed that you are ServSafe certified, can you tell us what that means?

ServSafe® is a food safety training and certificate program administered by the National Restaurant Association. The program is accredited by ANSI and the Conference for Food Protection. It basically means I am trained to handle food safely, using the same safety procedures that restaurants need to be certified to run their businesses.

*One of my favorite questions to ask- what makes you happy? And
what inspires you?

Right now food is what really is making me happy. My friends and people in my network all love to explore the culinary world and try new food. I recently got to meet Anthony Bourdain and Eric Ripert in Boston, and it was a thrill to meet them both. I am inspired by the world around me, as cliché as that sounds...you never know what you'll find in the culinary world, or
what someone will come up with. It's a thrill to discover something that
makes your stomach, eyes, and heart happy.

*Any fun baking tips to share?

The only baking tips I would recommend is to always use the best and freshest ingredients. It really makes a difference in your finished product and people really taste the difference. I love making people happy, and I believe that is really the most important factor in what I do.



I got to try out the vanilla marshmallows and the Silly's Sinful Chocolate Fudge Cookies, and they were both soooo good! Especially together! These are some seriously chocolatey cookies, you guys! They're kind of like if you made hot chocolate into a cookie, and then added some chocolate chunks in for good measure! And they come packaged in cute brown bags with a window so you can see what's inside.



I'm still trying to figure out a way to try toasting the marshmallows, since the only fire source I've been able to find in my house is a birthday candle. But they're so good plain that I can only imagine how good they would be toasted!
